  • 1 tablespoon vegetable oil
  • 1 cup diced cooked chicken
  • 2 large eggs, lightly beaten
  • 1 cup frozen peas and carrots, thawed
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 3 cups cooked and cooled rice
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced chicken and cook until heated through, about 2-3 minutes. Remove chicken from the skillet and set aside.
  3. Pour the beaten eggs into the skillet. Cook, stirring gently, until scrambled. Remove eggs from the skillet and set aside with the chicken.
  4. Add peas and carrots to the skillet and stir-fry for 2-3 minutes until tender-crisp.
  5. Add minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
  6. Add the cooked rice to the skillet. Break up any clumps with your spatula.
  7. Pour the soy sauce and sesame oil over the rice. Stir well to combine and coat the rice evenly.
  8. Return the cooked chicken and scrambled eggs to the skillet. Stir everything together until heated through.
  9. Stir in the sliced green onions.
  10. Serve hot.

  • Using day-old, cold rice is best for fried rice as it is drier and less likely to become mushy.
  • Feel free to add other vegetables like diced onions, bell peppers, or broccoli.
