  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup chopped water chestnuts
  • 1/4 cup chopped mushrooms
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 8 large bibb lettuce leaves
  • 2 tablespoons chopped green onions, for garnish
  • 1 tablespoon chopped peanuts, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground chicken and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  3. Stir in garlic and ginger and cook for 1 minute more until fragrant.
  4. Add water chestnuts, mushrooms, soy sauce, hoisin sauce, sesame oil, and white pepper. Cook, stirring, until the sauce has thickened and coats the chicken, about 5 minutes.
  5. Spoon the chicken mixture into the lettuce leaves.
  6. Garnish with green onions and peanuts, if desired.
  7. Serve immediately.

Notes

  • You can substitute ground turkey or pork for the chicken if you prefer.
  • For a spicier kick, add a pinch of red pepper flakes to the chicken mixture.
  • Ensure your water chestnuts are finely chopped for the best texture.
  • If you don’t have bibb lettuce, iceberg or butter lettuce will also work.
