1 tablespoon vegetable oil
1 pound ground chicken
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/2 cup water chestnuts, drained and chopped
1/4 cup hoisin sauce
2 tablespoons soy sauce or tamari
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 teaspoon black pepper
1/4 cup chopped green onions, divided
1 head butter lettuce or iceberg lettuce, leaves separated and washed
Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground chicken to the skillet and cook, breaking it up with a spoon, until it is fully browned. Drain off any excess grease.
Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
Stir in the chopped water chestnuts.
In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, and black pepper.
Pour the sauce mixture over the chicken and stir well to coat everything evenly. Cook for 2 to 3 minutes until the sauce thickens slightly.
Remove the skillet from the heat. Stir in half of the chopped green onions.
Spoon the chicken mixture into the prepared lettuce cups.
Garnish the wraps with the remaining green onions before serving.
Notes
Use butter lettuce for a softer cup or iceberg lettuce for a crispier texture.
For extra flavor, add 1 teaspoon of Sriracha to the sauce mixture.
You can substitute ground turkey for ground chicken if desired.
