  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil, divided
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 3/4 cup Marsala wine
  • 1/2 cup chicken broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pound chicken breasts to 1/2-inch thickness.
  2. In a shallow dish, combine flour, salt, and pepper. Dredge chicken in the flour mixture.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  4. Add chicken and cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  5. Add remaining 1 tablespoon of olive oil to the skillet. Add mushrooms and cook until browned, about 5-7 minutes.
  6. Add garlic and cook for 1 minute until fragrant.
  7. Pour in Marsala wine and chicken broth, scraping up any browned bits from the bottom of the skillet.
  8. Bring to a simmer and cook for 5 minutes, until the sauce has slightly reduced.
  9. Stir in butter until melted.
  10. Return chicken to the skillet and spoon sauce over it.
  11. Garnish with fresh parsley and serve immediately.

Notes

  • For a richer flavor, use a good quality Marsala wine.
  • You can substitute cremini mushrooms for white button mushrooms.
  • Ensure the skillet is hot before adding the chicken for a good sear.
