1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup Italian-seasoned breadcrumbs
1/2 cup grated Parmesan cheese
2 large eggs
1/4 cup olive oil
1 (24 ounce) jar marinara sauce
8 ounces cooked pasta, or 4 cups cubed crusty bread
8 ounces shredded mozzarella cheese
1/4 cup chopped fresh parsley, for garnish
Instructions
Preheat your oven to 375°F (190°C).
In a shallow dish, whisk the eggs. In another shallow dish, combine the breadcrumbs and Parmesan cheese.
Dip each chicken piece into the egg, then dredge it in the breadcrumb mixture, ensuring it’s fully coated.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the coated chicken pieces and cook for 2-3 minutes per side, until golden brown. Remove chicken from skillet and set aside.
Pour the marinara sauce into the skillet, scraping up any browned bits from the bottom. Add the cooked pasta or cubed bread to the sauce and stir to combine.
Arrange the browned chicken pieces over the pasta and sauce mixture.
Sprinkle the shredded mozzarella cheese evenly over the top.
Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Garnish with fresh parsley before serving.
Notes
For a quicker version, use pre-cooked rotisserie chicken.
You can add your favorite vegetables like sautéed onions, bell peppers, or spinach to the casserole.
If using bread cubes instead of pasta, toast them lightly before adding to the casserole for a crispier texture.
