A comforting, creamy soup that captures the classic flavors of chicken pot pie without the crust.

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup milk or half-and-half
  • 2 cups cooked, shredded chicken breast
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1/2 cup small diced potatoes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the dried thyme and rosemary. Cook for 1 minute until fragrant.
  4. Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
  5. Gradually whisk in the chicken broth until the mixture is smooth. Bring the mixture to a simmer, stirring occasionally until it begins to thicken.
  6. Stir in the milk or half-and-half. Add the cooked chicken, frozen peas, frozen corn, and optional potatoes.
  7. Continue to simmer gently until the potatoes are tender and the soup is heated through, about 10 to 15 minutes. Do not boil after adding the milk.
  8. Season generously with salt and pepper to your preference.
  9. Serve hot, perhaps with biscuits or croutons on top.

Notes

  • For a thicker soup, let it simmer uncovered for a few extra minutes, or mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the simmering soup until thickened.
  • You can use rotisserie chicken for quick preparation.
  • This soup freezes well. Cool completely before storing in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating slowly on the stovetop.
