You can make this flavorful, easy chicken sausage pasta skillet tonight. It combines tender chicken sausage, pasta, and a rich, creamy sauce in one pan for a quick weeknight dinner.

  • 1 pound pre-cooked chicken sausage, sliced into coins
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining. Set the drained pasta aside.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until lightly browned, about 4 to 5 minutes. Remove the sausage from the skillet and set aside.
  3. Add the diced onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic, Italian seasoning, and smoked paprika. Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes (with their juice) and the chicken broth. Bring the mixture to a simmer and let it cook for 3 minutes, scraping up any browned bits from the bottom of the pan.
  5. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth. Let it warm through for 2 minutes, but do not boil.
  6. Stir in the fresh spinach until it wilts completely into the sauce.
  7. Return the cooked sausage and the drained pasta to the skillet. Toss everything together to coat evenly.
  8. If the sauce seems too thick, add the reserved pasta water, one splash at a time, until you reach your desired creamy consistency.
  9. Season with salt and pepper to your taste. Serve this quick chicken sausage dinner immediately.
