1.5 lbs boneless, skinless chicken breasts
1 cup chicken broth
1 (10 oz) can diced tomatoes and green chiles, undrained
Place the chicken breasts in a large skillet or pot.
Pour the chicken broth, diced tomatoes and green chiles (with liquid), taco seasoning, cumin, and oregano over the chicken.
Add the 1/4 cup of water to the skillet.
Bring the mixture to a simmer over medium-high heat.
Once simmering, reduce the heat to medium-low, cover the skillet, and cook for 15 to 20 minutes, or until the chicken is cooked through and tender.
Remove the chicken breasts from the skillet and place them on a cutting board.
Use two forks to shred the chicken completely.
Return the shredded chicken to the skillet. Stir the chicken into the remaining liquid until it is fully coated and heated through. This creates your juicy chicken taco filling.
Warm the tortillas according to package directions (briefly heating them in a dry skillet works well).
Serve the shredded chicken filling immediately in the warm tortillas. Top with your favorite fresh toppings like onion, cilantro, and a squeeze of lime juice.
Notes
For extra flavor, you can use half chicken broth and half orange juice for the simmering liquid.
If you prefer a thicker sauce, remove the lid for the last 5 minutes of cooking after shredding the chicken.
