  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/2 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon garam masala
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. In a bowl, combine yogurt, lemon juice, grated ginger, minced garlic, garam masala, cumin, turmeric, paprika, cayenne pepper, and salt. Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  2. Heat vegetable oil in a large skillet or pot over medium-high heat. Add the marinated chicken in batches, browning it on all sides. Remove chicken from skillet and set aside.
  3. Add chopped onion to the skillet and cook until softened, about 5-7 minutes.
  4. Add minced garlic and grated ginger to the skillet and cook for 1 minute more until fragrant.
  5. Stir in cumin, coriander, garam masala, turmeric, and cayenne pepper. Cook for 1 minute, stirring constantly.
  6. Pour in the crushed tomatoes and bring to a simmer. Return the chicken to the skillet.
  7. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and sauce has thickened.
  8. Stir in the heavy cream and cook for another 5 minutes, until heated through. Do not boil.
  9. Season with salt to taste.
  10. Garnish with fresh cilantro before serving.

Notes

  • Serve with basmati rice or naan bread.
  • For a spicier dish, add more cayenne pepper.
  • If you don’t have chicken thighs, you can use chicken breast, but adjust cooking time to avoid drying out.
