Instructions

  1. Cook the noodles according to package directions until al dente. Before draining, reserve about 1/2 cup of the starchy cooking water. Drain the noodles well.
  2. While the noodles cook, prepare the sauce. In a small bowl, whisk together the chili garlic sauce, soy sauce, dark soy sauce, rice vinegar, brown sugar, and sesame oil. Set aside.
  3. Heat the neutral oil in a large skillet or wok over medium heat. Add the minced garlic and grated ginger. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Pour the prepared sauce mixture into the skillet. Let it bubble for about 15 seconds.
  5. Add 1/4 cup of the reserved noodle water to the sauce. Stir quickly to emulsify slightly.
  6. Add the drained noodles to the skillet. Toss everything together rapidly until the noodles are completely coated in the glossy sauce. Add a splash more noodle water if the sauce seems too dry.
  7. Remove from heat immediately. Serve hot, topped with green onions and sesame seeds if you like.
