Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 tablespoon lime zest
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 2 cups cooked rice (brown or white)
  • 2 cups mixed vegetables (like bell peppers and onions), sliced

Instructions

  1. In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp from the skillet.
  3. In the same skillet, add the sliced vegetables. Cook until tender-crisp, about 5 minutes.
  4. In a small bowl, whisk together the lime juice, lime zest, and minced garlic.
  5. Return the cooked shrimp to the skillet with the vegetables. Pour the lime dressing over the shrimp and vegetables. Toss gently to coat.
  6. Stir in the chopped cilantro. Cook for 1 minute until heated through.
  7. Divide the cooked rice into serving bowls. Top with the chili lime shrimp and vegetable mixture. Serve immediately.

Notes

  • You can substitute quinoa or cauliflower rice for a lower-carb option.
  • Adjust the chili powder amount to control the spice level.
  • Marinate the shrimp in the lime juice mixture for 10 minutes before cooking for a deeper flavor.
