1 pound firm white fish fillets (like cod, tilapia, or mahi-mahi)
2 tablespoons olive oil
1 tablespoon adobo sauce from canned chipotle peppers
1 lime, juiced
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
Salt and black pepper to taste
8 small corn tortillas
For the Slaw:
2 cups shredded cabbage (green or a mix of green and red)
1/4 cup chopped fresh cilantro
1 tablespoon lime juice
1 tablespoon olive oil
Salt and pepper to taste
Optional Toppings: avocado slices, sour cream or Greek yogurt, salsa, hot sauce
Instructions
Preheat your grill to medium-high heat.
In a shallow dish, whisk together olive oil, adobo sauce, lime juice, chili powder, cumin, garlic powder, salt, and pepper to create the marinade.
Add the fish fillets to the marinade, ensuring they are evenly coated. Let them marinate for about 15-20 minutes.
While the fish marinates, prepare the slaw. In a medium bowl, combine shredded cabbage, cilantro, lime juice, olive oil, salt, and pepper. Toss to combine and set aside.
Grill the marinated fish for 4-6 minutes per side, or until cooked through and flakes easily with a fork.
Warm the corn tortillas on the grill or in a dry skillet for about 30 seconds per side until pliable.
Flake the grilled fish into pieces.
Assemble the tacos: Place flaked fish onto each warm tortilla. Top generously with the prepared slaw and any optional toppings you desire.
Notes
If you don’t have fresh cilantro, you can use dried cilantro, but use less.
Adjust the amount of adobo sauce to control the spice level.
Ensure your fish is cooked through but not dry.
