For the Torte:
1 ripe avocado, pitted and peeled
1/2 cup unsweetened cocoa powder
1/2 cup maple syrup
1/4 cup melted coconut oil
1/4 cup almond milk
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
For the Raspberry Salsa:
1 cup fresh raspberries
1 tablespoon lime juice
1 teaspoon honey or agave nectar
1/4 teaspoon finely grated lime zest
Instructions
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a food processor, combine the avocado, cocoa powder, maple syrup, coconut oil, almond milk, and vanilla extract. Process until smooth and creamy.
In a small bowl, whisk together the baking soda and salt. Add this to the food processor and pulse a few times to combine.
Pour the batter into the prepared cake pan and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the torte cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
While the torte cools, prepare the raspberry salsa. In a medium bowl, gently mash the raspberries with a fork.
Stir in the lime juice, honey or agave nectar, and lime zest. Mix well.
To serve, slice the cooled torte and top with a generous spoonful of raspberry salsa.
Notes
Ensure your avocado is very ripe for the creamiest texture.
You can substitute other berries for the raspberries if desired.
For a richer flavor, you can add a tablespoon of espresso powder to the torte batter.
