3 very ripe bananas, mashed
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1 cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, mix the mashed bananas and melted butter together.
Stir in the sugar, egg, and vanilla extract until just combined.
In a separate small bowl, whisk together the baking soda and salt. Add this mixture to the wet ingredients.
Gradually mix in the flour until you have a smooth batter. Do not overmix.
Fold in the chocolate chips.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
Use bananas that are heavily spotted or almost black for the best moisture and flavor.
For extra gooey chocolate, reserve a small handful of chocolate chips and press them onto the top of the batter before baking.
If the top browns too quickly, loosely tent the loaf with aluminum foil for the last 15 minutes of baking.
