1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

1 cup granulated sugar
1/2 cup (1 stick) unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
2 cups grated zucchini, excess moisture squeezed out
1 cup chocolate chips (semi-sweet or dark recommended)
Instructions
Preheat your oven to 375°F (190°C). Grease and flour a 12-cup muffin tin, or line with paper liners.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Gently fold in the grated zucchini and chocolate chips.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Ensure you squeeze out as much moisture as possible from the grated zucchini to prevent soggy muffins.
For an extra burst of flavor, you can add a pinch of ground ginger to the dry ingredients.
If you prefer, you can substitute half of the all-purpose flour with whole wheat flour for a slightly healthier muffin.
