Make a rich, single-serving chocolate cake with a molten center in just five minutes using your microwave.

Ingredients

  • 4 Tablespoons granulated sugar
  • 2 Tablespoons unsweetened cocoa powder
  • 1/4 Teaspoon baking powder
  • Pinch of salt
  • 3 Tablespoons milk
  • 1 Tablespoon vegetable oil
  • 1/4 Teaspoon vanilla extract
  • 1 Tablespoon chocolate chips (for the center)

Instructions

  1. In a standard microwave-safe mug (about 10-12 oz), whisk together the flour, sugar, cocoa powder, baking powder, and salt until combined.
  2. Add the milk, vegetable oil, and vanilla extract to the dry ingredients.
  3. Mix everything thoroughly with a fork until the batter is smooth and no dry pockets remain. Do not overmix.
  4. Push the 1 Tablespoon of chocolate chips into the center of the batter. Do not stir them in; let them sit in the middle.
  5. Place the mug in the microwave. Cook on high power for 60 to 75 seconds. Cooking time varies based on microwave wattage.
  6. Check the cake; the edges should look set, but the center should still look slightly wet or soft.
  7. Let the cake cool in the mug for one minute before eating.

Notes

  • For a richer lava center, use a small square of dark chocolate instead of chips.
  • If your cake turns out dry, reduce the cooking time by 5 to 10 seconds next time.
  • If you want a richer flavor, substitute the milk with coffee.
