This chocolate mousse recipe is your cheat code for a fast, elegant, and intensely decadent dessert. Forget complicated techniques; you get silky, rich results with minimal effort. It’s the perfect fix for a quick chocolate craving.

Ingredients

Scale
  • 1 cup heavy whipping cream
  • 4 ounces bittersweet chocolate (at least 60% cacao), finely chopped
  • 2 large egg yolks
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Place the chopped chocolate in a heatproof bowl.
  2. In a small saucepan, heat half of the heavy cream until it just simmers. Pour the hot cream over the chocolate and let it sit for 2 minutes. Whisk until completely smooth. Set aside to cool slightly.
  3. In a separate bowl, whisk the egg yolks and sugar together until pale and slightly thickened.
  4. Gently whisk the egg yolk mixture into the slightly cooled chocolate mixture. Whisk in the vanilla extract and salt.
  5. In a clean, cold bowl, whip the remaining half cup of heavy cream until soft peaks form.
  6. Gently fold about one-third of the whipped cream into the chocolate base to lighten it.
  7. Carefully fold in the remaining whipped cream until no white streaks remain. Do not overmix.
  8. Spoon the mousse into individual serving dishes.
  9. Chill in the refrigerator for at least 2 hours to set before serving.

Notes

  • Use high-quality chocolate for the best flavor.
  • Ensure the cream for whipping is very cold.
  • For a richer flavor, use dark chocolate between 70% and 72% cacao.
  • You can substitute the egg yolks with 1/2 cup of melted, cooled mascarpone cheese for an egg-free version, skipping steps 3 and 4.
