Ingredients
All-purpose flour: 3 tablespoons
Granulated sugar: 3 tablespoons
Unsweetened cocoa powder: 2 tablespoons
Baking powder: 1/4 teaspoon
Salt: Pinch
Milk: 3 tablespoons
Vegetable oil: 1 tablespoon
Vanilla extract: 1/2 teaspoon
Peanut butter: 1 tablespoon (for center)
Instructions
In a microwave-safe mug (about 10-12 oz), whisk together the flour, sugar, cocoa powder, baking powder, and salt until combined.
Add the milk, vegetable oil, and vanilla extract to the dry ingredients. Mix well with a fork until just smooth. Do not overmix.
Spoon half of the batter into the bottom of the mug.
Drop the tablespoon of peanut butter directly into the center of the batter.
Spoon the remaining batter over the top, carefully covering the peanut butter layer.
Microwave on high for 60 to 90 seconds. Cooking time varies by microwave wattage. Check after 60 seconds. The cake should look set but still moist.
Let the mug cake cool for one minute before eating.
Notes
If your cake seems dry, reduce the microwave time by 5-10 seconds next time.
For an even gooier center, use a creamy peanut butter.
You can add a few chocolate chips to the batter for extra richness.
