Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 scoop (approx. 30g) chocolate protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain Greek yogurt
  • 1/4 cup maple syrup
  • 1/4 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with 12 paper liners or grease it well.
  2. In a large bowl, whisk together the flour, cocoa powder, protein powder, baking soda, baking powder, and salt.
  3. In a separate medium bowl, whisk together the applesauce, Greek yogurt, maple syrup, milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Gently fold in the chocolate chips, if using.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • You can substitute almond flour or oat flour for all-purpose flour for a gluten-free option. Adjust baking time as needed.
  • Adjust the maple syrup to your preferred sweetness level.
  • Feel free to add nuts or berries for extra texture and flavor.
