Ingredients

Scale
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) evaporated milk
  • 1/4 cup (55g) unsalted butter
  • 1/2 cup (120g) tahini
  • 1 teaspoon vanilla extract
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/4 teaspoon salt

Instructions

  1. Grease an 8×8 inch baking pan and line it with parchment paper.
  2. In a medium saucepan, combine sugar, evaporated milk, and butter.
  3. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved.
  4. Bring the mixture to a boil and cook for 5 minutes, stirring occasionally.
  5. Remove from heat. Stir in the tahini, vanilla extract, cocoa powder, and salt until smooth.
  6. Pour the mixture into the prepared baking pan.
  7. Let it cool completely at room temperature, then refrigerate for at least 2 hours, or until firm.
  8. Cut into squares and serve.

Notes

  • For a smoother fudge, sift the cocoa powder before adding it.
  • If you don’t have evaporated milk, you can substitute with whole milk, but the fudge may be slightly softer.
  • Store fudge in an airtight container at room temperature for up to a week.
