  • 2 large eggs

  • 1/2 teaspoon salt
  • 1 cup crushed Christmas cookies (about 4-5 cookies)
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter and brown sugar until well combined.
  3. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  4. In a separate medium bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the crushed Christmas cookies and white chocolate chips, if using.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached.
  9. Let the blondies cool completely in the pan on a wire rack before cutting into bars.
