Transform your leftover Christmas ham and sharp cheddar into a delightful, fluffy Dutch baby pancake. This recipe is a unique and impressive brunch idea perfect for Christmas morning.

  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 4 ounces diced ham
  • 4 ounces shredded sharp cheddar cheese
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place a 10-inch oven-safe skillet (cast iron is ideal) in the oven while it preheats.
  3. In a blender, combine flour, eggs, milk, salt, and pepper. Blend until smooth, about 30 seconds.
  4. Carefully remove the hot skillet from the oven. Add the butter and swirl to coat the bottom and sides as it melts.
  5. Pour the batter into the hot skillet.
  6. Evenly scatter the diced ham and shredded cheddar cheese over the batter.
  7. Return the skillet to the oven and bake for 20-25 minutes, or until the Dutch baby is puffed up, golden brown, and the cheese is melted and bubbly.
  8. Serve immediately.
