1 cup water
1/2 cup unsalted butter
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs
Vegetable oil for frying
1/2 cup granulated sugar
1 teaspoon ground cinnamon
For the Chocolate Sauce:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
1 tablespoon unsalted butter
Instructions
In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
Remove from heat and stir in flour until a smooth ball forms.
Return to low heat and cook, stirring constantly, for 1 minute.
Transfer dough to a large bowl. Let cool for 5 minutes.
Beat in eggs one at a time until fully incorporated and dough is smooth.
In a deep skillet or Dutch oven, heat 2-3 inches of vegetable oil to 350°F (175°C).
Spoon or pipe small portions of dough into the hot oil. Fry until golden brown and puffed, about 2-3 minutes per side.
Drain churro bites on paper towels.
In a small bowl, combine sugar and cinnamon. Toss warm churro bites in the cinnamon sugar mixture.
For the chocolate sauce: In a microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until smooth. Stir in butter until melted and combined.
Serve churro bites warm with chocolate sauce for dipping.

Ensure oil temperature is maintained for even cooking.
