Transform leftover cinnamon rolls into an incredibly decadent and warm dessert. This Cinnamon Roll Bread Pudding soaks soft rolls in a rich, spiced custard for a comforting treat perfect for brunch or dessert.

  • 6 large pre-made cinnamon rolls (about 10 oz total)
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Optional: Extra cream cheese icing for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.
  2. Cut the cinnamon rolls into quarters or bite-sized pieces. Place the pieces evenly in the prepared baking dish. If the rolls have icing, leave most of it on; it will melt into the custard.
  3. In a medium bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined and slightly frothy.
  4. Slowly pour the custard mixture evenly over the cinnamon roll pieces in the baking dish, making sure all pieces are saturated. Lightly press down on the rolls to help them absorb the liquid.
  5. Let the mixture sit for 15 to 20 minutes to allow the bread to soak up the custard.
  6. Bake for 35 to 45 minutes, or until the top is golden brown and a knife inserted near the center comes out mostly clean (a little moistness is fine).
  7. Remove from the oven. If desired, drizzle with extra cream cheese icing while still warm.
  8. Let cool for 10 minutes before serving warm.

Notes

  • This recipe works best with day-old or slightly stale cinnamon rolls, but fresh ones are fine too.
  • If your rolls are very large, you may need to increase the custard ingredients slightly.
  • For an extra rich flavor, substitute 1/4 cup of the milk with a splash of bourbon or dark rum in the custard.
