This recipe combines the comforting flavors of cinnamon rolls with the delightful texture of bread pudding, creating a perfect brunch or dessert treat. It’s a delicious way to use up leftover cinnamon rolls or to make a special occasion dessert.

Ingredients

Scale
  • 1 pound day-old cinnamon rolls, cut into 1-inch cubes
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. Spread the cubed cinnamon rolls evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, cinnamon, vanilla extract, and salt until well combined.
  4. Pour the egg mixture evenly over the cinnamon roll cubes, ensuring they are all saturated. Gently press down on the bread cubes to help them absorb the liquid.
  5. Let the mixture sit for at least 15-20 minutes to allow the bread to soak up the custard.
  6. Bake for 40-50 minutes, or until the bread pudding is set and golden brown on top. A knife inserted into the center should come out clean.
  7. While the bread pudding is baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach your desired drizzling consistency.
  8. Once the bread pudding is out of the oven, let it cool slightly for about 10 minutes.
  9. Drizzle the glaze over the warm bread pudding before serving.

Notes

  • Using day-old cinnamon rolls works best as they will absorb the custard better without becoming too mushy.
  • You can add a handful of chopped pecans or walnuts to the bread pudding mixture for extra texture.
  • If you don’t have cinnamon rolls, you can use brioche or challah bread and add extra cinnamon and sugar to the custard.
