This Cinnamon Roll French Toast Bake is a crowd-pleasing brunch dish. It features cinnamon-swirl bread soaked in a rich custard and baked into a pull-apart casserole.

Ingredients

Scale
  • 1 loaf (1 pound) cinnamon-swirl bread, cut into 1-inch cubes
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Butter, for greasing
  • For the topping:
  • 1/2 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup cold butter, cut into cubes
  • 1 teaspoon ground cinnamon

Instructions

  1. Grease a 9×13 inch baking dish with butter.
  2. Spread the bread cubes evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, cinnamon, vanilla extract, and salt until well combined.
  4. Pour the egg mixture evenly over the bread cubes, ensuring all pieces are moistened. Press down gently to help the bread absorb the liquid.
  5. Cover the dish and refrigerate for at least 4 hours, or preferably overnight.
  6. Preheat your oven to 350°F (175°C).
  7. In a medium bowl, combine the brown sugar, flour, cinnamon, and cold butter cubes. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  8. Sprinkle the topping evenly over the bread mixture in the baking dish.
  9. Bake for 40-50 minutes, or until the bake is golden brown and puffed, and the center is set.
  10. Let it cool slightly before serving.

Notes

  • For a richer flavor, you can use half-and-half instead of milk.
  • If you don’t have cinnamon-swirl bread, you can use challah or brioche bread and add an extra teaspoon of cinnamon to the custard.
  • The bake can be assembled the night before and refrigerated, making it perfect for a stress-free morning.
  • Serve warm with your favorite syrup or powdered sugar.
