This Cinnamon Roll French Toast Bake is a crowd-pleasing brunch dish. It features cinnamon-swirl bread soaked in a rich custard and baked into a delightful pull-apart casserole, perfect for any gathering.

Ingredients

Scale
  • 1 loaf (1 pound) cinnamon swirl bread, cut into 1-inch cubes
  • 6 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • For the Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Spread the bread cubes evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, 1/2 cup granulated sugar, 2 teaspoons cinnamon, vanilla extract, and 1/4 teaspoon salt until well combined.
  4. Pour the egg mixture evenly over the bread cubes, ensuring all pieces are moistened. Press down gently to help them absorb the liquid.
  5. In a separate medium bowl, prepare the topping by combining the flour, brown sugar, 1/4 cup granulated sugar, 1 teaspoon cinnamon, and 1/4 teaspoon salt.
  6. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  7. Sprinkle the topping evenly over the bread mixture in the baking dish.
  8. Cover the dish with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the bread to soak.
  9. Preheat your oven to 350°F (175°C).
  10. Remove the plastic wrap and bake for 40-50 minutes, or until the bake is golden brown and puffed, and the topping is crisp.
  11. Let it cool slightly before serving.

Notes

  • For an extra decadent touch, you can drizzle with cream cheese frosting before serving.
  • If you don’t have cinnamon swirl bread, a brioche or challah bread can be substituted.
  • Ensure the bread is fully soaked for the best texture.
