1 loaf (1 pound) day-old brioche or challah bread, cut into 1-inch cubes
1 cup (2 sticks) unsalted butter, melted
1 cup packed light brown sugar
2 tablespoons ground cinnamon
4 large eggs
2 cups whole milk
1 teaspoon vanilla extract
1/2 teaspoon salt
Cream cheese glaze (optional)
Instructions
Grease a 9×13 inch baking dish.
In a large bowl, toss the bread cubes with melted butter until evenly coated.
In a separate bowl, whisk together brown sugar and cinnamon.
Add the brown sugar and cinnamon mixture to the bread cubes and toss to coat.
Spread half of the coated bread cubes into the prepared baking dish.
In another bowl, whisk together eggs, milk, vanilla extract, and salt until well combined.
Pour half of the egg mixture evenly over the bread in the dish.
Top with the remaining bread cubes and pour the rest of the egg mixture over them.
Cover the dish tightly with plastic wrap and refrigerate overnight (or for at least 8 hours).
When ready to bake, preheat your oven to 350°F (175°C).
Remove the plastic wrap and bake for 40-50 minutes, or until the casserole is puffed up, golden brown, and cooked through.
Let it cool slightly before serving. Drizzle with cream cheese glaze if desired.
