  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini (about 2 medium zucchini)
  • Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the granulated sugar and vegetable oil.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  6. Fold in the grated zucchini.
  7. Prepare the streusel topping by combining the flour, brown sugar, and cinnamon in a small bowl.
  8. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  9. Pour half of the zucchini bread batter into the prepared loaf pan.
  10. Sprinkle half of the streusel topping over the batter.
  11. Pour the remaining batter over the streusel.
  12. Top with the remaining streusel mixture.
  13. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  14. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
