  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • ¾ cup milk
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, ½ cup granulated sugar, baking powder, ½ teaspoon cinnamon, and salt.
  3. In a separate medium bowl, whisk together the egg, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. While the muffins are baking, prepare the cinnamon sugar topping. In a shallow bowl, combine the ¼ cup granulated sugar and 1 tablespoon cinnamon.
  8. Once the muffins are out of the oven, let them cool in the tin for a few minutes. Then, carefully remove them from the tin and let them cool slightly on a wire rack.
  9. Dip the top of each warm muffin into the melted butter, then immediately roll it in the cinnamon sugar mixture until well coated.
  10. Place the coated muffins back on the wire rack to cool completely before serving.

Notes

  • For an extra cinnamon flavor, you can add another ½ teaspoon of cinnamon to the muffin batter.
