Ingredients
Scale
1 (15-ounce) can chickpeas, rinsed and drained
1 tablespoon olive oil
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
Instructions
Preheat your oven to 400°F (200°C).
Pat the rinsed and drained chickpeas completely dry with paper towels. This is important for crispiness.
In a medium bowl, toss the dried chickpeas with olive oil until evenly coated.
In a small bowl, mix together the granulated sugar, cinnamon, and salt.
Sprinkle the cinnamon-sugar mixture over the chickpeas and toss to coat them well.
Spread the coated chickpeas in a single layer on a baking sheet.
Roast for 20-25 minutes, shaking the pan halfway through, until the chickpeas are golden brown and crispy.
Let them cool slightly before enjoying.
Notes
Ensure chickpeas are very dry before tossing with oil and seasonings for maximum crispiness.
Adjust the amount of cinnamon and sugar to your preference.
These are best enjoyed fresh but can be stored in an airtight container at room temperature for a day or two, though they may lose some crispiness.
