Ingredients

  • All-purpose flour: 2 1/2 cups
  • Baking powder: 2 teaspoons
  • Salt: 1/2 teaspoon
  • Unsalted butter, softened: 1 cup
  • Granulated sugar: 1 1/2 cups
  • Eggs, large: 3
  • Vanilla extract: 1 teaspoon
  • Milk: 1 cup
  • Ground cinnamon (for swirl): 3 tablespoons
  • Brown sugar (for swirl): 1/2 cup
  • Butter, melted (for swirl): 1/4 cup

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Whisk together the flour, baking powder, and salt in a medium bowl. Set this aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the flour mixture. Mix until just combined. Do not overmix.
  6. In a small bowl, mix the ground cinnamon and brown sugar for the swirl filling.
  7. Pour half of the batter into the prepared pan. Sprinkle the cinnamon-sugar mixture evenly over the batter. Drizzle with half of the melted butter.
  8. Gently spread the remaining batter over the cinnamon layer. Top with the remaining cinnamon-sugar mixture and the last of the melted butter.
  9. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool completely in the pan before slicing and serving.

Notes

  • For an extra layer of flavor, consider adding 1 teaspoon of ground nutmeg to the cake batter.
  • Do not overmix the batter once you add the flour; this prevents a tough cake.
  • The coffee cake is best enjoyed the day it is made, but it stores well at room temperature for up to three days.
