Instructions

  1. Prepare the Pie Crust: In a large bowl, whisk together the flour and salt. Gradually add the ice water, a tablespoon at a time, mixing until the dough just comes together. Do not overmix. Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Prepare the Apple Filling: Peel, core, and slice the apples about 1/4-inch thick. In a large bowl, toss the apple slices with granulated sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated.
  3. Assemble the Pie: On a lightly floured surface, roll out one disk of dough into a 12-inch circle. Carefully transfer the dough to a 9-inch pie plate. Trim the edges, leaving about a 1/2-inch overhang. Pour the apple filling into the pie crust. Dot the top of the filling with the small pieces of butter.
  4. Create the Lattice Top: Roll out the second disk of dough into a 12-inch circle. Cut this dough into 1-inch wide strips. Arrange the strips over the apple filling in a lattice pattern, weaving them over and under each other. Crimp the edges of the lattice strips to the bottom crust to seal. Trim any excess dough.
