A classic beef stew recipe perfect for a comforting one-pot meal. This hearty stew is designed to warm you up on chilly days with tender beef and vegetables in a rich, savory broth.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup dry red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1.5 pounds potatoes, peeled and cut into 1-inch cubes
  • 1 cup frozen peas

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, toss beef cubes with flour, salt, and pepper.
  3. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Brown beef in batches, then set aside.
  4. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  5. Stir in garlic and cook for 1 minute more until fragrant.
  6. Pour in beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot.
  7. Stir in tomato paste, thyme, rosemary, and bay leaves.
  8. Return the browned beef to the pot.
  9. Bring the stew to a simmer, then cover and transfer to the preheated oven.
  10. Bake for 2 hours.
  11. Add potatoes to the pot, stir, and continue baking for another 1 hour, or until beef and potatoes are tender.
  12. Stir in frozen peas during the last 10 minutes of cooking.
  13. Remove bay leaves before serving.

Notes

  • For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 15 minutes of cooking.
  • You can substitute any hearty root vegetables for the potatoes, such as parsnips or sweet potatoes.
  • This stew can be made ahead of time and reheats well. The flavors often deepen overnight.
