1.5 pounds beef sirloin, cut into 1/2-inch strips
1 tablespoon olive oil
1 tablespoon butter
1 large onion, chopped
8 ounces mushrooms, sliced
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon all-purpose flour
1.5 cups beef broth
1/2 cup sour cream
2 tablespoons chopped fresh parsley
12 ounces egg noodles
Instructions
Cook egg noodles according to package directions.
While noodles cook, heat olive oil and butter in a large skillet over medium-high heat.
Add beef strips and cook until browned on all sides. Remove beef from skillet and set aside.
Add onion and mushrooms to the skillet. Cook until softened, about 5-7 minutes.
Stir in garlic, salt, and pepper. Cook for 1 minute more.
Sprinkle flour over the mushroom mixture and stir to coat. Cook for 1 minute.
Gradually whisk in beef broth until smooth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Reduce heat to low. Stir in sour cream until well combined. Do not boil.
Return beef to the skillet and heat through.
Serve stroganoff over cooked egg noodles, garnished with fresh parsley.
Notes
For extra flavor, you can use a mix of mushroom varieties.
Ensure the sour cream is at room temperature to prevent curdling.
If the sauce is too thick, add a little more beef broth or water.
