  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese

  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Slice each chicken breast horizontally to create two thinner cutlets.
  • In a shallow dish, combine breadcrumbs, Parmesan cheese, salt, and pepper.
  • In another shallow dish, whisk the eggs.
  • Place flour in a third shallow dish.
  • Dredge each chicken cutlet first in flour, then dip into the egg, and finally coat thoroughly with the breadcrumb mixture.
  • Heat olive oil in an oven-safe skillet over medium-high heat.
  • Sear the chicken cutlets for 2-3 minutes per side until golden brown.
  • Pour marinara sauce over the chicken in the skillet.
  • Top each cutlet with shredded mozzarella cheese.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Garnish with fresh basil if desired before serving.
