  • 1 scoop (30g) vanilla protein powder
  • 1/2 cup (120g) plain Greek yogurt
  • 2 large eggs
  • 1/4 cup (60ml) unsweetened almond milk
  • 2 tablespoons (30g) unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) whole wheat flour
  • 1/4 cup (30g) almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/4 cup berries or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with liners or grease it well.
  2. In a large bowl, whisk together the protein powder, Greek yogurt, eggs, almond milk, applesauce, and vanilla extract until smooth.
  3. In a separate bowl, combine the whole wheat flour, almond flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. If using, gently fold in berries or chocolate chips.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
