A classic, comforting pumpkin pie recipe with a smooth, spiced custard filling in a flaky crust. Perfect for holidays and fall gatherings.

Ingredients

Scale
  • 1 recipe for flaky pie crust
  • 1 (15 ounce) can pumpkin puree
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs, lightly beaten
  • 1 (12 ounce) can evaporated milk

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare your pie crust and place it in a 9-inch pie plate. Crimp the edges as desired.
  3. In a large bowl, whisk together the pumpkin puree, granulated sugar, salt, cinnamon, ginger, cloves, and nutmeg until well combined.
  4. Stir in the lightly beaten eggs until just incorporated.
  5. Gradually whisk in the evaporated milk until the filling is smooth.
  6. Pour the pumpkin filling into the prepared pie crust.
  7. Bake for 15 minutes at 425°F (220°C).
  8. Reduce the oven temperature to 350°F (175°C) and continue baking for 35-45 more minutes, or until a knife inserted near the center comes out clean.
  9. Let the pie cool completely on a wire rack before serving.

Notes

  • For a smoother filling, you can strain the pumpkin puree before mixing.
  • To prevent the crust from burning, you can cover the edges with foil during the last part of baking.
  • Chill the pie for at least 2 hours before serving for best results.
