This classic squash casserole recipe delivers a comforting and flavorful side dish, perfect for any meal. It features tender squash baked with creamy sour cream, savory cheese, and a hint of onion, topped with a delightful crunch.

  • 1.5 pounds yellow squash, thinly sliced
  • 1/2 cup chopped onion
  • 1 tablespoon butter
  • 1 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1 egg, beaten
  • Salt and pepper to taste
  • 1/2 cup crushed butter crackers or breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13 inch baking dish.
  3. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add the sliced squash to the skillet with the onions. Cook, stirring occasionally, until the squash is tender-crisp, about 8-10 minutes.
  5. In a large bowl, combine the sour cream, shredded cheddar cheese, milk, beaten egg, salt, and pepper.
  6. Stir the cooked squash and onion mixture into the sour cream mixture until well combined.
  7. Pour the squash mixture into the prepared baking dish, spreading it evenly.
  8. In a small bowl, combine the crushed crackers or breadcrumbs with the 2 tablespoons of melted butter. Sprinkle this topping evenly over the squash mixture.
  9. Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
  10. Let the casserole rest for a few minutes before serving.

  • You can use zucchini instead of yellow squash if you prefer.
