1 can (13.5 oz) full-fat coconut milk
1/4 cup granulated sugar
1 tablespoon chai tea blend (loose leaf or from tea bags)
1 teaspoon vanilla extract
1/4 teaspoon ground cardamom
Pinch of ground cinnamon
1 1/2 teaspoons unflavored gelatin
2 tablespoons cold water
Optional garnish: toasted coconut flakes, a sprinkle of cinnamon
Instructions
In a saucepan, combine coconut milk and sugar.
Add the chai tea blend, ground cardamom, and cinnamon to the saucepan.
Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the mixture is warm but not boiling.
Remove the saucepan from the heat. Let the chai tea steep in the coconut milk mixture for 10-15 minutes.
While the tea is steeping, sprinkle the gelatin over the cold water in a small bowl. Let it sit for 5 minutes to bloom.
Strain the coconut milk mixture through a fine-mesh sieve into a clean bowl to remove the tea leaves. Discard the tea leaves.
Whisk the bloomed gelatin into the warm coconut milk mixture until fully dissolved.
Stir in the vanilla extract.
Pour the panna cotta mixture into individual serving glasses or ramekins.
Cover the glasses/ramekins with plastic wrap and refrigerate for at least 4-6 hours, or until firm.
Before serving, garnish with toasted coconut flakes and a sprinkle of cinnamon, if desired.
Notes
For a stronger chai flavor, use more chai tea or steep for a longer period.
Ensure the gelatin is completely dissolved to prevent lumps.
Chill until the panna cotta is set.
