1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 large egg
1 cup milk
2 tablespoons melted butter
1 teaspoon vanilla extract
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1/2 cup all-purpose flour
1/4 cup shredded sweetened coconut
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 large egg, beaten
1/4 cup milk
1 cup vegetable oil, for frying
Instructions
Preheat your waffle cone maker. In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon for the waffles.
In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
Lightly grease your waffle cone maker. Pour about 1/4 cup of batter onto the hot maker and cook according to manufacturer’s instructions, until golden brown and cooked through. Carefully remove and shape into a cone while warm. Repeat with remaining batter.
While the waffle cones are cooking, prepare the chicken. In a shallow dish, combine 1/2 cup flour, shredded coconut, salt, pepper, garlic powder, and cayenne pepper.
In another shallow dish, whisk the beaten egg and 1/4 cup milk.
Dip each chicken piece into the egg mixture, then dredge in the coconut-flour mixture, ensuring it’s well coated.
Heat vegetable oil in a large skillet over medium-high heat.
Carefully add the coated chicken pieces to the hot oil, working in batches if necessary to avoid overcrowding.
Fry for 3-4 minutes per side, or until golden brown and cooked through. Remove chicken with a slotted spoon and drain on paper towels.
To assemble, fill the waffle cones with the fried coconut chicken.
Notes
You can use chicken breast instead of thighs if preferred.
