Coconut Shrimp with Dipping Sauce

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded sweetened coconut
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying (or cooking spray for baking)
  • For the Dipping Sauce:
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon grated fresh ginger

Instructions

  1. In a shallow dish, combine shredded coconut and panko breadcrumbs.
  2. In another shallow dish, place the flour.
  3. In a third shallow dish, whisk the eggs with salt and pepper.
  4. Pat the shrimp dry with paper towels.
  5. Dredge each shrimp first in the flour, shaking off any excess.
  6. Dip the floured shrimp into the beaten eggs, ensuring it’s fully coated.
  7. Press the egg-coated shrimp into the coconut-panko mixture, ensuring an even coating.
  8. For frying: Heat about 2 inches of vegetable oil in a large skillet or pot to 350°F (175°C). Fry shrimp in batches for 2-3 minutes per side, until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
  9. For baking: Preheat oven to 400°F (200°C). Place coated shrimp on a baking sheet lined with parchment paper. Lightly spray the tops with cooking spray. Bake for 10-12 minutes, flipping halfway through, until golden brown.
  10. While the shrimp cook, prepare the dipping sauce: In a small bowl, whisk together sweet chili sauce, soy sauce, lime juice, and grated ginger.
  11. Serve the hot coconut shrimp immediately with the dipping sauce.

  • Ensure shrimp are completely dry before coating for best adhesion.
  • Do not overcrowd the pan when frying to maintain oil temperature and ensure crispiness.
