Chewy blondies swirled with creamy cookie butter, a delightful bar cookie inspired by the viral spread.

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup cookie butter, divided

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine the melted butter and granulated sugar. Mix well.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Spread half of the blondie batter evenly into the prepared baking pan.
  7. Dollop half of the cookie butter over the batter. Swirl it gently with a knife.
  8. Spread the remaining blondie batter over the cookie butter layer.
  9. Dollop the remaining cookie butter on top and swirl again.
  10. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  11. Let cool completely in the pan before cutting into bars.

  • For extra gooeyness, reduce baking time slightly.
  • Ensure cookie butter is at room temperature for easier swirling.
  • Store in an airtight container at room temperature for up to 3 days.
