1 cup (2 sticks) unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup milk (any kind)
2 1/4 cups all-purpose flour
1/2 cup mini chocolate chips
12 ounces melting chocolate or chocolate almond bark, for dipping
Instructions
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the vanilla extract and salt.
Add the milk and mix until just combined.
Gradually add the flour, mixing on low speed until just incorporated. Do not overmix.
Stir in the mini chocolate chips by hand.
Roll the cookie dough into 1-inch balls. Place them on a parchment-lined baking sheet.
Freeze the dough balls for at least 30 minutes until firm.
Melt the dipping chocolate according to package directions.
Dip each frozen dough ball into the melted chocolate, letting excess drip off.
Return the dipped truffles to the parchment-lined sheet.
Refrigerate until the chocolate shell is set.
Notes
Heat-treat your flour before using to make this recipe completely safe to eat raw. Spread flour on a baking sheet and bake at 350°F for 5 minutes. Let it cool completely.
Store leftovers in an airtight container in the refrigerator for up to one week.
You can substitute half the flour with oat flour for a slightly different texture.
