  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 3 large eggs
  • 1 cup crushed chocolate sandwich cookies (about 12 cookies)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Combine the 1 3/4 cups cookie crumbs, 1/4 cup sugar, and melted butter in a bowl. Press this mixture firmly into the bottom of the prepared pan to form the crust.
  3. Bake the crust for 10 minutes. Remove from the oven and set aside.
  4. In a large bowl, beat the softened cream cheese and 1 cup sugar with an electric mixer until smooth. Scrape down the sides of the bowl.
  5. Beat in the vanilla extract and sour cream until just combined. Do not overmix.
  6. Add the eggs one at a time, mixing on low speed after each addition just until incorporated. Overmixing eggs causes cracking.
  7. Gently fold in the 1 cup of crushed cookies.
  8. Pour the cheesecake batter over the prepared crust.
  9. Bake for 25 to 30 minutes, or until the edges are set but the center still has a slight wobble.
  10. Turn off the oven, crack the door open slightly, and let the cheesecake cool inside the oven for 30 minutes. This slow cool prevents cracks.
  11. Remove from the oven and cool completely on a wire rack.
  12. Chill in the refrigerator for at least 4 hours, or preferably overnight, before cutting into bars.
