  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 cup dill pickle juice
  • 1 cup milk
  • 2 large eggs
  • 1.5 cups all-purpose flour
  • 2/3 cup powdered sugar
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Vegetable oil, for frying

Instructions

  • Place chicken pieces in a bowl and pour pickle juice over them. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  • In a separate bowl, whisk together milk and eggs.
  • In another shallow dish, combine flour, powdered sugar, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
  • Remove chicken from pickle juice and pat dry with paper towels.
  • Dip each chicken piece into the milk and egg mixture, ensuring it’s fully coated.
  • Dredge the coated chicken pieces in the flour mixture, pressing gently to adhere.
  • Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 350°F (175°C).
  • Carefully add chicken nuggets to the hot oil in batches, being careful not to overcrowd the pot.
  • Fry for 3-5 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
  • Remove nuggets from the oil with a slotted spoon and place on a wire rack set over a baking sheet to drain excess oil.
  • Serve hot with your favorite dipping sauces.

  • Using powdered sugar in the flour mixture helps achieve the signature slightly sweet and crispy coating.
  • Ensure the oil is at the correct temperature for best results. Too low and they’ll be greasy; too high and they’ll burn before cooking through.
