  • 1 cup dill pickle juice
  • 1 cup milk
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2/3 cup powdered sugar
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Peanut oil for frying

Instructions

  1. Cut chicken breasts into nugget-sized pieces.
  2. Place chicken in a bowl and cover with dill pickle juice. Let marinate for at least 30 minutes, or up to 2 hours.
  3. In a separate bowl, whisk together milk and eggs.
  4. In another bowl, combine flour, powdered sugar, salt, pepper, paprika, garlic powder, and onion powder.
  5. Remove chicken from pickle juice, letting excess drip off.
  6. Dip each chicken piece into the milk and egg mixture, ensuring it is fully coated.
  7. Dredge the chicken pieces in the flour mixture, pressing to coat evenly.
  8. Heat peanut oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  9. Fry nuggets in batches for 2-3 minutes, or until golden brown and cooked through.
  10. Remove nuggets from oil and drain on a wire rack or paper towels.
