1 (32 ounce) package frozen shredded hash brown potatoes
1 cup sour cream
1/2 cup melted butter
1/4 cup chopped onion
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded cheddar cheese
1 cup crushed corn flakes (optional topping)
2 tablespoons melted butter (optional topping)
Instructions
Preheat your oven to 350 degrees F (175 degrees C).
In a large bowl, combine the frozen hash browns, sour cream, melted butter, chopped onion, milk, salt, and pepper. Mix well until everything is evenly coated.
Stir in 1.5 cups of the shredded cheddar cheese.
Pour the mixture into a greased 9×13 inch baking dish.
If using, mix the crushed corn flakes with the 2 tablespoons of melted butter and sprinkle over the top of the casserole.
Bake for 40-50 minutes, or until the casserole is golden brown and bubbly.
Sprinkle the remaining 1/2 cup of cheddar cheese over the top during the last 5-10 minutes of baking, if desired.
Let it rest for a few minutes before serving.
Notes
For an extra cheesy casserole, you can add a layer of shredded cheese in the middle of the mixture before baking.
If you don’t have corn flakes, you can omit the topping or use crushed crackers.
Ensure your hash browns are completely thawed for easier mixing.
