Ingredients
Scale
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white chocolate chips
1 cup dried cranberries
1/2 cup chopped pecans (optional)
1/4 cup powdered sugar (for dusting)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the white chocolate chips, dried cranberries, and pecans (if using).
Spread the batter evenly into the prepared baking pan.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the bars cool completely in the pan before dusting with powdered sugar.
Cut into squares and serve.
Notes
Ensure your butter is truly softened for the best creaming results.
Do not overmix the batter after adding the flour to keep the bars tender.
For a stronger cranberry flavor, you can soak the dried cranberries in warm water for 10 minutes before draining and adding to the batter.
Store cooled bars in an airtight container at room temperature for up to 3 days.
