- 1 cup vegetable oil
- 1/2 cup water
- 1/4 cup white distilled vinegar
- 2 tablespoons lemon juice
- 1 tablespoon sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/4 teaspoon anchovy paste (optional, for authentic flavor)
- 1/4 cup grated Parmesan cheese
- Combine the water, white vinegar, lemon juice, sugar, oregano, basil, salt, pepper, garlic powder, and onion powder in a blender.
- Add the anchovy paste, if using. Blend on low speed until the sugar dissolves.
- With the blender running on low speed, slowly drizzle in the vegetable oil until the mixture begins to emulsify and thicken slightly.
- Stop the blender and add the grated Parmesan cheese. Blend briefly until just combined. Do not overmix after adding cheese.
- Transfer the dressing to an airtight container.
- Refrigerate for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a thicker dressing, reduce the water slightly.
- If you do not have anchovy paste, you can omit it, but the flavor will be less authentic.
- This dressing keeps well in the refrigerator for up to one week. Shake well before using.
